Vegan Eggnog
Ingredients
· 2 10-oz packages silken regular or low-fat tofu
· 16 oz. vanilla soymilk
· 1 T. plus 1 t. vanilla extract
· 1/4 c. sugar
· 2 T. brown sugar
· 1/4 t. ground tumeric
· 1/2 to 1 c. rum or brandy
· nutmeg to taste
-In a blender, combine all ingredients except
nutmeg; blend thoroughly, stopping occasionally to scrape down sides.
Serve well-chilled and dusted with nutmeg.
Serves: 8
Ginger Lemonade
Ingredients
· fresh ginger
· juice of 3 lemons
· 1/2 cup maple syrup (or sweetener of your choice)
· 2 quarts water
-Place water on the stove to boil.
-Peel a good 2-3 inch slice of ginger (depending on your taste).
-Grate the ginger over a fine mesh grater.
-Squeeze the freshly grated pulp to remove the juice. Discard dry
pulp.
-When water boils, add the lemon and ginger juice.
-Let steep for 20 minutes, then add the syrup.
Almond Shake
Ingredients:
· 1/2 c. almonds (raw are fine)
· 2 c. water
· maple syrup (optional)
· Approximately 3 frozen bananas (cut into bite-size chunks
before freezing)
· 3 Tblsp carob powder
-Grind almonds in a blender for 1 to 2 minutes.
-Add one cup of water and blend at high speed for 2 minutes.
-Add another cup of water and blend for 2 more minutes.
-Pour alomond mixture into a strainer lined with cheese cloth over
a large bowl.
-Let strain for several minutes.
-Pour almond milk into a container and chill for several hours.
(Makes approximately 2 cups almond milk)
-Place 2 c. almond milk in blender and add a few frozen bananas
at a time while blending at high speed.
-Add carob and frozen bananas to desired consistency.
Chai (indian herbal tea with
ginger)
Ingredients:
· small leaf tea (earl grey, chinese tea etc.)
· 1T fresh grated ginger (the more the merrier)
· 1tsp cinnamon
· 1tsp cloves
· 1tsp cardamon pods
· 1/2tsp nutmeg
· 1/2tsp garam masala
· soy milk
· sweetener of choice
· water
-Fill saucepan or pot with water and add ginger, boil.
-Add tea and spices, simmer, remove and simmer again till dark.
-Remove from heat, add soy milk and sweetener to taste.
-Return to heat and bring to boil three times to bring out flavour.
-Strain and serve.
Preparation time: 5 mins
Cranberry Cordial
Ingredients:
· 1 lb (1/2 kg) cranberries, coarsely chopped
· 3 cups (3/4 liter) sugar
· 2 cups (1/2 liter) light rum
-Place the chopped cranberries in a 2-quart (2 liter) jar that has
a tight-fitting lid.
-Add the sugar and rum.
-Adjust the lid securely and place the jar in a cool, dark place.
-Invert the jar and shake it every day for six weeks.
-Strain the cordial into bottles and seal with corks.
Hot Cider (non-alcoholic)
Ingredients:
· (1 or 2) oranges
· a few (20?) whole cloves
· apple cider
· cinnamon sticks
Stud the oranges with cloves. (Push the pointy end into them until
the flower part is flush with the peel.) (about 10 per orange).
You may want to peel the top layer of skin off the oranges or use
organic oranges if you don't want to ingest the chemicals they put
on them.
- Put the cider into a large saucepan, and add the oranges and some
cinnamon sticks (one or two will do).
- Heat for hours (you can just leave it on all day for a party). It
gets better with age.
- Just pour in more cider when it starts getting low.
Hot Indian "Milk" Drink
Ingredients:
· 1/2 liter of your favorite unflavored soya milk (thicker
is better)
· 1/2 tsp ground ginger
· 1/2 tsp ground cloves
· 1/2 tsp ground cinnamon
· 1/2 tsp ground allspice (optional)
· 1 tsp sweetener (your choice, I use raw sugar - you can also
use more or less)
-In a large cooking pot (at least twice the size needed to contain
your soya milk), mix everything together and heat on high while stirring
constantly.
-Bring to a boil (remember to stir constantly!), and the concoction
will froth up. -Remove from heat, let the froth subside, and repeat
this cycle three more times. This is why your pot has to be bigger:
the frothing would cause a major spill if you used a smaller pot.
-Serve and drink while hot.
Makes two servings.
You can also adjust sweetness in your cup. Some people may want to
strain this, as the ground spices sometimes have some coarse particles.
Apple Mulling Spice
Ingredients:
· 25 cinnamon sticks, ea. 2 inches long (about 3 ounces)
· 6 whole nutmegs (1 ounce)
· 1/3 cup each: chopped dried orange and lemon peel (drying
instructions follow)
· 1/4 cup each whole allspice and whole cloves
· 2 tablespoons finely chopped, crystalized ginger (optional)
-Put cinnamon sticks and nutmeg in a plastic bag and crush with a
rolling pin or bottom of a small heavy skillet until broken in small
pieces. (The nutmeg will be quite stubborn.)
-Mix with remaining ingredients. Keep the mix in a glass jar until
ready to use. Alternatively, you could place 3 generous tablespoons
of the mix in a 5-inch square of cheescloth and tie the bundle with
string.
The actual mulling recipe follows:
-Stir 1/2 cup water and 1/3 cup granulated sugar in a large saucepan.
-Heat over medium heat until sugar is dissolved.
-Add 3 1/4 cups of wine (red or white) and the spice bag or teaball
filled with spice mix.
-Reduce heat to low, cover and heat very gently until mixture is very
hot but not boiling (about 20 minutes).
-To mull apple juice, add a spice bag to 8 cups of apple juice.
-Bring the mixture to a boil, reduce heat, cover and simmer 30 to
35 minutes.
To dry citrus peel:
- With a vegetable peeler, remove the colored part of peel from 2
large oranges and 4 lemons.
-Place in single layer on plate; cover with a paper towel and let
stand at room temperature 1 day or until dried.
-Snip in small pieces with kitchen shears or chop course.
Chocolate Milkshake
Ingredients:
· 1 or more frozen banana(s) - I usually use 1 and a half
· 3 Tbsp. powdered cocoa
· 1 cup nonfat soymilk (approx. - I never measure, again
it depends)
· a drizzle of maple syrup or other sweetener - optional
Hibiscus "Cooler"
Ingredients:
· 64 oz water
· 3 TB whole hibiscus flowers
· 12 oz can apple juice concentrate
-Boil water with hibiscus.
-Turn off flame and let it suffuse (?) for a while.
-Pour tea and apple juice concentrate into container.
-Refrigerate.
This makes a little over 64oz (2 quarts = 2liters)
You don't have to use "heaping" TBs of hibiscus.
Hot Cocoa
Ingredients:
· 1 tbsp cocoa
· 2 tbsp unrefined sugar
· 1 cup of rice milk
· 1/4 tsp almond or vanilla extract
-Add All of the ingredients in a microwaveable
mug and microwave on high for 1 minute.
-Stir and drink
Serves: 1
Preparation time: 2 Min.
Oatmeal Milk
Ingredients:
· 1 banana
· 1 cup of cooked oatmeal
· 2 cups of water
-Blend ingredients. You can add a tsp. of
vanilla if desired.
-Blend until smooth.
-Put in a pitcher, and refrigerate.
-It will keep approx. the same time as milk.
